traces its roots back to an unlikely origin: an Italian interior
decorator and manufacturer of retail fixtures.
Carlo Veggetti
began his career, taking over the Company from his father, and
started producing bakery cases to prevent the bakeries' obsolescence,
in order to save the old profession of the baker and stimulate the
demand for his products.
Carlo Veggetti
founded the
baking school in Barlassina (near Milano)in 1972 to train candidates
who would, upon completion, purchase an "Il Fornaio panetteria" (retail bakery),
outfitted with his fixture and recipes.
He is the man who has created and masterminded the
system in the seventies; by doing this he preserved the concept of
the "local bakery".
system started in Milano with a first outlet, which was followed by several
hundreds of them in Italy and abroad, transforming the traditional bakery
into a more professional and marketing oriented operation to satisfy the
changing taste and habits of the customers.
Over 3000 Franchisees, bakeries, coffee shops or restaurants
operating under their own names around the world. In the early
1980, during a trip to Florence,
Howard Lester
, Chairman and CEO of W. Sonoma, noticed the abundance of these
wonderful Old world bakeries, he tracked down
Carlo Veggetti
and negotiated an agreement for the rights of
in U.S.A.

Il Fornaio America Corporation
until 1987 when Larry Mindel, the current Chairman and CEO took over.
Larry Mindel
started the reorganization of the Company by giving a new direction to
extend the concept beyond bakeries to include full service restaurants,
while in Italy it continued with the traditional concept of bakery.
Il Fornaio America Corporation
went public in September 1997 at
NASDAQ
stock exchange with the current Company's President
Mr. Mike Hislop.
Il
goal was, and still is, to offer the most authentic Italian bread, food
and dining experience available outside Italy.
